This steak sandwich is a one of favorites! It is a great way to use leftover steak. It combines the flavors of blu cheese with red onions and of course beef!
As a rancher the health of your cattle is number one priority and for Arturo this meant a lot of time in the saddle this past summer. He was up and out the door before the sun came up to ride through cattle. When he rode through the steers he was looking for anyone that needed to be treated for pink eye or foot rot. These two things are quite common in cattle of all classes and ages that graze the Flint hills in summer time. It is important to doctor cattle with either ailment to make sure they feel their best and continue to preform to their full potential. Both pink eye and foot rot are commonly caused by a bacterial infection. Much the same as us when we have a bacterial infection, a little antibiotic will clear up the infection and cattle return to normal health within a few days. When Arturo would see a calf with a pink eye or foot rot he and Isaac would rope it and administer the recommended dose of an antibiotic via an injection. Arturo would then record the calf’s ID number, the dosage used, and the date of treatment in his phone. While he recorded this info Isaac would mark the calf with the date using a paint stick so they would know that it had been doctored previously when they rode through the same bunch of cattle. This practice also helped Arturo monitor how quickly the calf responded to the antibiotic and to make sure he doesn’t over treat anything.
When he would go out to ride though cattle I would pack he and Isaac a lunch or they would plan to have lunch at the house when they got done. Most of the lunches where roast beef sandwiches or chicken salad…yes, can you believe it two cowboys eating chicken salad after checking cattle! Seems a little odd huh? Well one day they were headed to the house to eat and I was out of roast beef and didn’t have any chicken salad made, so I whipped up this yummy flat bread sandwich and it has been one of our go-to’s ever since. It is super easy and uses up left over steak!
Flat Bread Steak Sandwich
Naan Bread
Steak (we have used left over sirloin and ribeye)
Blu cheese mayo
Sliced red onion
Greens of choice (we have used spinach and arugula, whatever you have in the fridge)
Blu Cheese Mayo:
Crumble blu cheese and mix with mayo. We really like blue cheese, so I do one-part blue cheese one-part mayo.
Sandwich:
Toast Naan bread per package, smear the blue cheese mayo on bread, top with warmed left over steak, red onion and greens.
Pretty simple, but oh so good! We have paired this with a cucumber salad, tomato salad or just plain ol’ potato chips!
