Today we are headed to New Mexico to celebrate Christmas with Arturo’s family and we thought we would share the traditional New Mexico Christmas cookie recipe…Bizchochitos! This is one of Arturo’s favorite cookies and in fact he had his Mom bake, I don’t know how many dozen for our wedding, to take the place of his groom’s cake! However, it is not Christmas without these cookies and we hope that you enjoy them as much as we do!

Bizcochitos
6 cups of flour (sifted once)
4 tsp baking powder
1 tsp salt
1 lb lard (2 cups)
¾ cups of sugar
1 egg
3 tsp cinnamon
½ cup of rum or substitute water or orange juice
Sugar Mixture:
2 tablespoons cinnamon
1 cup of sugar
Sift the flour once and again with the baking powder and salt. Cream the lard in a mixer until fluffy and add the sugar and continue mixing. Once the lard and sugar are thoroughly mixed add the egg again mixing to combine. Next add the cinnamon and continue beating until smooth. Add in flour mixture in three additions. Once all the flour has been added pour in the rum, orange juice or water and mix until it is smooth enough to roll out. Working with about 1/3 of the dough roll out to about ¼ of an inch thick and cut with cookie cutter (and new dough to dough scrap). Bake at 400 degrees for 15 minutes until lightly brown. While still warm dip in sugar mixture.
