My go-to Salsa

We made a roast earlier in the week and we always have left overs! With this one we got three meals out of it…the classic roast, roast nachos and last night we had roast taquitos.

We also love doing hot beef sandwiches with left over roast! With the nachos and the taquitos I whipped up a batch of my homemade salsa. It is super easy and quite tasty! This is my go-to recipe anytime we are cooking Mexican and want chips and salsa. Enjoy!

Salsa

14.5 oz of diced tomatoes or a jar of home grown canned tomatoes
½ to a whole Jalapeno, stemmed and seeded, depending on how hot you like it
1 onion
1 bunch of cilantro
2 cloves of garlic
½ lime
½ Tbsp. of sugar
salt and pepper

Rough chop the jalapeno and onion.

Place the onion, jalapeno, garlic and cilantro in food processor. Pulse to chop.

We like ours a little chunky, however my little assistant really likes to push the pulse button, so it usually becomes pretty smooth before it is all over and done with!

After you have chopped the veggies, add your tomatoes, sugar, lime and salt and pepper to taste. Pulse again to mix.

Then give it a taste and adjust if you feel like it needs it. I usually always start with a half of a jalapeno, then add to it if I need too.

My little taste tester did not think that we nailed it last night…my jalapeño was extra hot, so even with a half it was spicier than normal. However, Leo persevered and kept eating it!

We also make this anytime we are making Beef Fajitas!

Salsa Recipe
