Looking for a dip to take to the neighbor’s BBQ? This twist on a classic guacamole is a great way to kick things up a notch and impress your friends. By simply adding roasted corn to the recipe, you have a new and different way to serve guacamole. We love to pair this side dish or appetizer with tacos or fajitas, or sometimes we just eat it all by itself!
Tips on how to make the perfect batch of guacamole
- Make sure your avocados are soft, but not too soft. When picking them out in the store give them a gentle squeeze. If they have a little give to them load them up.
- If you don’t want to start the grill to roast the corn you can do it on the stove top or in the over.

- Avocados
- Red onion
- Corn
- Lime
- Garlic
- Jalapeno
- Salt and pepper
How to make Roasted Corn Guacamole
Heat your grill, over or stovetop to roast your corn. Season the corn with salt, pepper and olive oil. Roast on the grill until it is lightly charred on the outside.
Dice your avocado, red onion and jalapeno. We like it with a little kick, so I usually add an entire jalapeno, stemmed and seeded.
Then add your cilantro, garlic, and lime.
Next cut the cooled corn off the cob.
Add to the bowl.
The last step is to mix it all together. When mixing, I smash the avocado a little with a fork. I like it chunky not smooth. However, when you smash it a little, it gives it a nice texture.
Roasted Corn Guacamole

- 3 avocados
- 2 ears of corn
- 1/2 red onion diced
- 1 jalapeno stemmed and seeded
- 1 lime
- 1/2 bunch cilantro diced
- salt and pepper
