Breakfast Beef Enchilada Casserole

December 15, 2019 by Wrenn Leave a Comment

Looking to WOW your holiday guest with an easy to make, but delicious breakfast casserole? Or maybe you are headed to a potluck brunch…this Beef Enchilada Casserole is your ticket. This dish is one you might find at your local café. It offers a little spice and a whole lot of flavor. It is also easy to put together and reheats great!

Enchiladas for Breakfast? Why not?

Seriously why not have the flavors of our favorite enchilada dish served with protein-packed eggs and breakfast beef Chorizo sausage.

Tips for Making the Breakfast Beef Enchiladas

  • We like to make ours in a 10 1/2” cast iron skillet, however, if you don’t have that size or don’t want to use your cast iron you could do it in an 8×8 pan.
  • To cut down on time you could cook the sausage ahead of time so all you have to do is layer the ingredients and pop it in the oven.
  • This dish reheats great in the microwave, so if you have leftovers you are set for an easy breakfast the next morning.

Tools used for this Dish

  • 10 1/2″ Cast Iron Skillet
  • 7″ J.A. Henkels Knife

 Cut of Meat

  • For this dish, we used ground beef to make the Beef Chorizo. Ground beef is one of the most versatile cuts of beef out there.

Ingredients

Chorizo Beef Sausage (From the New Mexico Quiche)

Eggs

can of cream of mushroom soup

diced green chili

onion, diced

corn tortillas

Salt and pepper

Colby Jack cheese

Browning Chorizo and then add the diced onions and sauté until the onions are translucent.

Whisk the eggs with Salt and Pepper.

Turn the heat off of the chorizo and onion. Then add the Cream of Mushroom and chili. Add a fourth of a can of the soup can of water to the meat mixture.

Start building the casserole by adding a thin layer of the meat mixture on the bottom.

Then add three tortillas.

Add more of the meat sauce. Add 1/3 of the eggs and a third of the cheese.

Then repeat the process till the filling is all gone.  Place some tortilla strips on the top and place it in the oven at 350 for 30-45 minutes.
