Spanish Cauliflower “Rice”

Cauliflower is quite boring and a little bland when it comes right down to it. However, when you make it like Spanish Rice you can surely kick up the flavors!  This dish offers all of the tasty flavors of Spanish rice, but all of the health benefits of cauliflower. It is super easy to make and pairs well with any taco. I make this Spanish Cauliflower “rice” just like I make my Spanish rice. 

Tips for making Spanish Cauliflower “Rice”

  • I prefer to buy a bag of frozen cauliflower “rice” to make it a little easier, however, you can make your own “rice” by processing the head of cauliflower. 
  • Always use chicken stock and if you don’t have chicken stock,  use a bouillon cube as this adds flavor to your cauliflower. 
  • Always dice your peppers and onions. 
  • Cook your tomato paste down.

Pair this Spanish Cauliflower “Rice” with any Mexican inspired dish.

We like to pair this dish with any Mexican inspired dish. This is a great plant-based recipe that gives you all the flavors of a dense rice, but all the health benefits of a vegetable. Some of our favorite dishes we like to serve this Spanish Cauliflower “Rice” with are:

Ingredient List

Frozen cauliflower rice
Onion
Red bell pepper
Garlic
Tomato paste
Oregano
Salt
Pepper
Chicken stock
Olive oil 

How to make Spanish Cauliflower “Rice”

Begin by sautéing your onion and pepper in a turn of olive oil.  Once your peppers and onions are translucent, add your garlic and tomato paste. 

Cook down your tomato paste for a minute. 

Next,  you will add the cauliflower rice and stir to combine the flavors in the pot. Then add the chicken stock, oregano, salt, and pepper. Cover and let cook for 10-15 or until the stock has been absorbed.

Ingredients
  

  • 1 bag Cauliflower Rice Frozen
  • 1/2 Onion diced
  • 1/2 Red bell pepper diced
  • 1 Garlic Clove minced
  • 1 tbsp Tomato paste
  • 1 tsp Oregano
  • 1/4 cup Chicken stock
  • 1 tbsp Olive oil
  • Salt and Pepper

Instructions
 

  • Begin by sautéing your onion and pepper in a turn of olive oil.  Once your peppers and onions are translucent, add your garlic and tomato paste.
