Cauliflower is quite boring and a little bland when it comes right down to it. However, when you make it like Spanish Rice you can surely kick up the flavors! This dish offers all of the tasty flavors of Spanish rice, but all of the health benefits of cauliflower. It is super easy to make and pairs well with any taco. I make this Spanish Cauliflower “rice” just like I make my Spanish rice.
Tips for making Spanish Cauliflower “Rice”
- I prefer to buy a bag of frozen cauliflower “rice” to make it a little easier, however, you can make your own “rice” by processing the head of cauliflower.
- Always use chicken stock and if you don’t have chicken stock, use a bouillon cube as this adds flavor to your cauliflower.
- Always dice your peppers and onions.
- Cook your tomato paste down.

How to make Spanish Cauliflower “Rice”
Begin by sautéing your onion and pepper in a turn of olive oil. Once your peppers and onions are translucent, add your garlic and tomato paste.
Cook down your tomato paste for a minute.
Next, you will add the cauliflower rice and stir to combine the flavors in the pot. Then add the chicken stock, oregano, salt, and pepper. Cover and let cook for 10-15 or until the stock has been absorbed.
