This week Arturo whipped up this delicious Beef, Kale and Tortellini Soup. It was so simple and full of good nutritious ingredients. I couldn’t wait to share it with you guys today! Enjoy!
This soup is full of protein with the mini ground beef meat balls and rich nutrients provided by the kale, carrots, bell peppers celery and onion!
Beef Tortellini Soup with Kale
1 carrot, peeled and diced
2 sticks of celery, diced
1 bell pepper
1 small onion, diced
1 lb of ground beef, made into small meatballs and seasoned with Pacheco Beef Italian Seasoning
1 can of diced tomatoes
3 cups kale, cleaned and chopped
1 Tbsp tomato paste
10 Oz of pre-made three cheese tortellini
32 Oz of beef stock
1 clove garlic, minced
4 cups of water
Season the ground beef with Pacheco Beef Italian Seasoning or any Italian seasoning and form small meatballs about the size of a ping pong ball. Place in pot and brown.
Remove meatballs from pot once they are browned and set aside. Add veggies in and sauté till translucent.
Add tomato paste and cook down. Then add the diced tomatoes, beef stock and water to the veggies.
Add the kale and let it cook down. After it has wilted add the meatballs.

Ingredients

- 1 garlic clove minced
- 1 carrot peeled and diced
- 2 celery sticks diced
- 1 bell pepper diced
- 1 small onion diced
- 1 tbsp tomato paste
- 1 10 oz can diced tomatoes
- 4 cups water
- 32 oz beef stock
- 3 cups kale cleaned and chopped
- 10 oz pre-made three cheese tortellini
Instructions
- Season the ground beef with Pacheco Beef Italian Seasoning or any Italian seasoning and form small meatballs about the size of a ping pong ball. Place in pot and brown.
