Beef Chorizo
This Beef Chorizo is full of flavor and spice and makes a great way to have beef for breakfast. Combining the spices of red chili, paprika, garlic, and onion powder, it packs a good, rounded flavor profile that works well in many dishes.

Why Ground Beef Chorizo?
Ground Beef and pork offer similar flavor profiles, with beef having a slightly stronger flavor. Therefore, using beef offers the sausage a richer, more robust flavor.
Ground Beef
When deciding what type of ground beef to use, such as 90/10 or 80/20 (90% lean, 20% fat; 80% lean, 20% fat), you want to go with an 80/20 version because the fat gives the sausage more flavor. However, this recipe will work with 90/10 as well. As long as it is beef, you are good to go.

Recipes Using Beef Chorizo
We love using this sausage in lots of ways. One is with scrambled eggs wrapped in a Homemade Tortilla, and another is in our New Mexico Quiche.
Beef Chorizo

1 lb Ground Beef
2 tbsp. of paprika
1 tbsp. Chili Powder
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. Cumin
1 tsp ground turmeric
1 tsp oregano leaves
1 tbsp. tomato paste
½ tbsp. Salt





Combine all the seasonings with the ground beef and mix thoroughly.


Chorizo Beef Sausage
Ingredients
- 1 lb ground beef
- 2 tbsp. paprika
- 1 tbsp. chili powder
- 1 tbsp. garlic powder
- 1 tbsp. onion powder
- 1 tbsp. cumin
