Breakfast Beef Enchilada Casserole

Tips for Making the Breakfast Beef Enchiladas

  • We like to make ours in a 10 1/2” cast iron skillet, however, if you don’t have that size or don’t want to use your cast iron you could do it in an 8×8 pan.
  • To save time, you could cook the sausage ahead of time, layering the ingredients and popping them in the oven.
  • This dish reheats great in the microwave, so if you have leftovers, you are set for a leisurely breakfast the following day.

 Cut of Meat

  • For this dish, we made the Beef Chorizo using ground beef, one of the most versatile cuts of beef.

Ingredients

Chorizo Beef Sausage (From the New Mexico Quiche)

Eggs

can of cream of mushroom soup

diced green chili

onion, diced

corn tortillas

Salt and pepper

Colby Jack cheese

Browning Chorizo and then add the diced onions and sauté until the onions are translucent.

Whisk the eggs with Salt and Pepper.

Turn the heat off of the chorizo and onion. Then add the Cream of Mushroom and chili. Add a fourth of a can of soup and water to the meat mixture.

Start building the casserole by adding a thin layer of the meat mixture on the bottom.

Then, add three tortillas.

Add more of the meat sauce. Add 1/3 of the eggs and a third of the cheese.

Then, repeat the process until the filling is gone. Add some tortilla strips to the top and bake at 350 for 30-45 minutes.

Chorizo Beef Sausage

Ingredients
  

  • 1 lb ground beef
  • 2 tbsp. paprika
  • 1 tbsp. chili powder
  • 1 tbsp. garlic powder
  • 1 tbsp. onion powder
  • 1 tbsp. cumin
  • 1 tsp ground turmeric
  • 1 tsp oregano leaves
  • 1 tbsp. tomato paste
  • 1/2 tbsp. salt

Instructions
 

  • Combine all the seasonings with the ground beef and mix thoroughly.

Breakfast Beef Enchiladas

Equipment

  • 10 1/2" Cast Iron Skillet

Ingredients
  

  • 1 lb ground beef
  • 4 eggs whisked
  • 1 14 oz can cream of mushroom soup
  • 1/4 cup diced green chili or one can
  • 1 onion diced
  • 12 corn tortillas
  • salt and pepper
  • 1 to 1 1/2 cups Colby jack cheese

Instructions
 

  • Browning Chorizo and then add the diced onions and sauté until the onions are translucent. 
  • Whisk the eggs with Salt and Pepper. 
  • Turn the heat off of the chorizo and onion. Then add the Cream of Mushroom and chili. Add a fourth of a can of the soup can of water to the meat mixture. 
  • Start building the casserole by adding a thin layer of the meat mixture on the bottom.  Then add three tortillas.  Add more of the meat sauce. Add 1/3 of the eggs and a third of the cheese. Then repeat the process till the filling is all gone.  Place some tortilla strips on the top and place it in the oven at 350 for 30-45 minutes.
