My Crock Pot Lasagna soup is a true comfort in a bowl. This recipe combines the classic flavors of a baked lasagna dish in a soup form. The rich ground beef, the savory tomato sauce mixed with herbs, and the cheesy tortellini are the perfect pairing of flavors, all combined in the crockpot for one easy meal on a busy weeknight!

I am a big fan of my crock pot, especially my small 3-quart model, which is perfect for simple meals like this one. I also really like recipes I can make ahead for before-school pick-up and activities, so we have dinner ready when we walk in the door!
I do have a great, simple lasagna recipe that is a crowd favorite; however, this soup recipe is just a different twist on those flavors and is perfect for a cold winter’s day. However, I do love to make my Classic Lasagna ahead of time and either freeze it for a later meal or have it in the fridge to pop in the oven for an easy dinner.

Ingredients and Substitutions for Crock Pot Lasagna Soup

Ground Beef: You could use ground pork, but beef is just better. You could also make little meatballs, but crumbling the ground beef is one less step.
Beef Stock: Boxed stock is outstanding, but I like having my homemade beef stock on hand.
Jarred Spaghetti Sauce: Whatever brand is your favorite.
Tortellini: The first time I made this, I used regular lasagna noodles, and it was fine, but the tortellini adds a cheesy pasta element and is easier to eat. A raviloi would also be a good substitute.
How to Make My Lasagna Soup

Begin by browning the ground beef in a skillet on the stovetop.

Season it with the Italian seasoning.

n the crock pot, add the beef stock and jar of spaghetti sauce.

Once the ground beef is browned, add it to the crockpot. Let it simmer on low for 4-6 hours or however long you need it to.

Once you are ready to serve the soup, turn the crockpot up and add the tortellini.

And spinach for 10-15 minutes.

Once the tortellini is cooked and the spinach is wilted, it is time to enjoy. I like to make my bowl with a dollop of ricotta on the bottom.

Ladle the soup on top, and enjoy!

- 2 lbs Ground Beef
- 2 tbsp Italian Seasoning Or measure with your heart
- 1 24 oz Jared Spagettie Sauce Your brand of choice.
- 2 cups Spinach
- 1 pint Beef Stock
- 12 oz Cheese Tortillini
- Ricatta Cheese For toppings
