Gluten-Free Chocolate Chip Skillet Cookie
If you love a classic chocolate chip cookie but need it gluten-free, this Gluten-Free Chocolate Chip Skillet Cookie is for you! It is dense and crispy on the edges but gooey and chocolatey in the middle.

In 2024, I learned that I have gluten sensitivity, and my overconsumption of all things gluten was making my body very inflamed. So, over the last year, I have reduced the amount of gluten I consume and have found relief. Through this process, Arturo has been very kind to experiment with gluten-free flour. Most have been significant failures, but not this cookie! This is one we make on repeat because it is delicious, and I can enjoy it knowing I will not pay for it in the next couple of days.

Ingredients to Make the Gluten-Free Chocolate Chip Skillet Cookie
P.S. This recipe is made in a small batch. Double the recipe if you want to make a 10” skillet cookie!
Gluten-Free Flour—My go-to gluten-free flour is King Arthur’s 1:1 gluten-free flour. However, we have also been using the 4 Cup brand.
Baking Soda – to make it rise
Salt – to even out the sweet
Unsalted Butter – Everything is better with butter
Sugar Brown Sugar – Sweet!!
Pure Cane Demerara Sugar – gives the cookie an extra richness that takes it to the next level. We order this off Amazon.
Vanilla
Egg—We sometimes use duck eggs, mainly because I have them on hand, but they are also great for baking.
Milk Chocolate Chips – My go-to brand is Ghirardelli.

How to make the Gluten-Free Chocolate Chip Skillet Cookie
Preheat oven to 375. In an 8” cast iron skillet, brown the butter and let it cool.

In a medium bowl, combine flour, baking soda, and salt until combined. Set aside.


Combine the browned butter, sugars, egg, and vanilla in a larger mixing bowl.


Add dry ingredients in thirds. You can do this with a spatula or hand mixer.

Once all ingredients are combined, fold in the milk chocolate chips.


Pat the dough in the 8-inch skillet in which the butter was browned.


Bake in a 375 oven for 25-30 min.

Tips for Making the Gluten-Free Chocolate Chip Skillet Cookie
- Brown the butter, but make sure it is thoroughly cooled before adding it to the sugars.
- You can use a spatula to mix the dough; however, if you use a hand mixer, do not overmix the dough.
- You can make this cookie with regular flour.
- Gluten-free cookies can take longer to bake, but don’t worry; this cookie’s baking time is 25-30 minutes.
- Why a skillet? Really, it just makes the presentation fun! This cookie can be made into regular Gluten-Free Chocolate Chip Cookies, but our family prefers using the skillet.
- To store the cookie, we like to cover it with foil and set it on the counter for easy access!

- 1 cup + 2 Tbsp gluten-free Flour My go-to Gluten Free Flour is King Arthur’s 1:1 Gluten Free Flour. However, we have been using the 4 Cup brand as well.
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 stick unsalted butter
- 6 tbsp sugar
- 3 tbsp brown sugar
- 3 tbsp pure cane demerara sugar We find it on Amazon.
- 1 tsp vanilla
- 1 egg
- 1 cup milk chocolate chips
