Ground Beef Lettuce Wraps
Ground Beef Lettuce Wraps are simple, super delicious, and good for you. We adapted the recipe for our Ground Beef Egg Roll in a Bowl to create a lettuce wrap, which has become a family favorite.

Ground Beef is a very versatile “cut” and can be used in almost anything. It is an excellent source of protein and is a great anchor to any meal. When shopping for ground beef, you will notice that it is labeled with a ratio of 90/10 or 80/20. These numbers describe the fat-to-lean ratio. Ground beef that is 90/10 means it is 90% lean to 10% fat. A trick that was shared with me by a dietitian friend is that if you have higher-fat ground beef, you can rinse the fat off after cooking it. To use this method, cook the ground beef as usual. Once it is cooked through, place it in a colander and rinse it under cool water. This will rinse any excess fat away.

Ingredients and Substitutions
Ground Beef – you can substitute pork or turkey, but let’s face it, ground beef is king here.
Sriracha – a garlic chili sauce, will work as a substitute.
Rice Wine Vinegar – can use white wine vinegar if you don’t have rice wine on hand.
Romain Lettuce Leaves – Any lettuce leaf will work. A butter lettuce leaf would be good, too. I like the crunch that the romaine lettuce offers.
Instructions

Heat sesame oil in a large skillet and add ground beef.

Add the grated ginger and one tablespoon of Sriracha. Cook until the ground beef is browned, broken up, and cooked through, about 7-10 minutes.

Add red onion and saute.

Add coleslaw, soy sauce, rice wine vinegar, pepper, and salt to taste, and stir until well combined. Cook, stirring regularly, until cabbage is tender, about 5 minutes.
In a small bowl, whisk together 1/4 cup mayonnaise and 1-2 tablespoons hot sauce. Add a pinch of salt to taste.

Once the cabbage is wilted down, it is ready to serve.

Serve a hearty helping of the ground beef mixture in a lettuce leaf and spoon the sriracha mayo over the top. Garnish with the green parts of the green onions and toasted sesame seeds.

Ingredients
- 2 tbsp sesame oil
- 1/2 cup red onion diced
- 1 lb ground beef
- 1 tsp ginger freshly grated
- 2-3 tbsp sriracha
- 3 tbsp soy sauce
- 1 tbsp rice wine vinegar
- salt and peper to taste
Garnish and Lettuce
- toasted sesame seeds
- sliced greeen onions
- Sriracha Mayo 1/4 cup mayo and srirach to taste mixed together.
Instructions
