How to Cook the Perfect Grilled Steak
A Perfect Grilled Steak can be tender in your mouth and deliver extreme flavors! However, it has to be cooked perfectly, and sometimes, that can be intimidating. Below are Arturo’s tips on how to grill the perfect steak!

We cook a steak in celebration or just because it is a Wednesday! We love steak in our household, and a steak grilled to “just past rare” is considered perfect. Arturo has honed his steak grilling skills, and we want to share some tips on grilling your own perfectly grilled steak.
Arturo’s Tips on How to Grill a Perfect Steak
- Remove the steak from the refrigerator for at least 30 minutes before grilling.
- Select a steak that is at least ¾ of an inch thick. Thin steaks say ½ an inch or less are hard to cook well, by the time you develop a nice crust on the out side the center is overdone.
- Pat the steak dry with paper towels if they are wet, before seasoning.
- Don’t just lightly dust it with seasoning; season the steak liberally.
- Build a 2-zone fire with one side extremely hot and the sun’s surface hot! You shouldn’t be able to hold your hand over the hot side for a second before it burns you. The cool side I don’t have any coals on, I rely on heat from the hot side. The cool side gives me a spot to move steaks if there is a flare-up and provides adequate heat to finish cooking a steak if I achieve the char I want on both sides but still need a little longer on the grill to reach the preferred internal temperature.
- I am about to get controversial…. but I have to say that charcoal is the way to go, and a wood fire is even better. I have never owned a gas grill and am super biased, I must admit. However, I have been around many gas grills and have never seen one that got hot enough for me. I’m sure a gas grill that gets as hot as the “surface of the sun” exists, but I’ve not been around one. Also, gas grills add nothing to the flavor; charcoal and wood offer smoky notes to the flavor profile of the finished steak.
