Little Cowboy Approved Chicken Nuggets

These are a favorite of our little cowboy! This morning when I told him we were having chicken nuggets for dinner he cheered! They are also super simple and good ol’ comfort food…because who doesn’t love chicken nuggets! We also pair this with mac and cheese and roasted broccoli and it is a winner…chicken dinner! My go-to mac and cheese recipe is Em’s Mac and Cheese. And then the broccoli is just roasted with olive oil and salt and pepper, I have noted that below.

I took inspiration for this from lots of different oven-baked chicken nugget recipes and created one that our little family loves. I hope your family will too!

Chicken Nuggets


1 lbs chicken tenders, cut into nuggets
1 cup of panko bread crumbs
1 cup of flour
2 egg whites, beaten
1  tbsp Arturo’s grill seasoning

Pre-heat oven to 425. Line a baking sheet with foil and spray with cooking spray.

Cut tenders up into 1 inch to ½ inch nuggets. Combine the flour and seasoning in a shallow dish and incorporate. In another shallow dish beat the egg whites and in a third shallow dish place bread crumbs. Coat nuggets in flour, then egg whites and then bread crumb mixture. Place on the prepared baking sheet.

Bake for 10-15 minutes until chicken is no longer pink in the middle and the coating is brown and crispy!

Roasted Broccoli
Broccoli florets
Olive oil
Salt and pepper

Clean and cut up broccoli. Place in an oven-safe dish, drizzle olive oil over the top and salt and pepper and toss to coat. Roast at 425 until brown and crispy, it takes 20-30 minutes!

Serve your little cowboys and cowgirls with a helping of mac and cheese and broccoli and enjoy!
