Roasted Corn Guacamole

Looking for a dip to take to the neighbor’s BBQ? This twist on a classic guacamole is a great way to kick things up a notch and impress your friends. By simply adding roasted corn to the recipe, you have a new and different way to serve guacamole. We love to pair this side dish or appetizer with tacos or fajitas, or sometimes we just eat it all by itself! For full post click here!
Wrenn’s Go-To-Salsa

This is Wrenn’s Go-To-Salsa. I make this anytime we are cooking Mexican and want chips and salsa. It is super easy and very tasty! For the full post click here!
Green Chili Dip

This dip is our version of some of the best stuff on the planet. When Arturo first took me home to New Mexico, his Mom had some Green Chili dip and potato chips and I fell in LOVE. Like I probably sat and ate the entire container. Here in Kansas, we can’t find it, so like everything else that we can’t find here we decided to make it ourselves! Well, I should say, Arturo decided to make it himself and like always, he knocked it out of the park! Go and buy the ingredients now and have it this weekend! You won’t regret it!! Nana’s Chili con Queso

This Chili con Queso recipe is an old family recipe and is a favorite in this house! This recipe was Arturo’s grandmother, Nana Pacheco’s. It is the perfect “gameday” party food as you can make it ahead and let it refrigerate overnight if you want to get ahead on your party prep. If there is any left over after the game, it’s awesome on top of a smothered burrito! See the full post here!
CALABACITAS, OUR GO-TO SQUASH AND ZUCCHINI DISH

Do you love to garden and love fresh veggies from the garden during the summer as we do? We also grow some winter squash and of course yellow squash and zucchini. And like every good gardener we have yellow squash and zucchini running out of our ears most days! See the full post here!
The Cowboy’s Ranch Style Beans
These beans are a favorite in our house! They pair perfectly with tortillas or ribs! We hope you enjoy them. See the full post here!
