Small Batch Mac and Cheese
Homemade Mac and Cheese is the BEST! This small-batch recipe offers all the flavors and all the goodness but does not leave many leftovers! Now, we rarely let Mac and Cheese go to waste. However, we, I mean I, don’t need it every day for the next week after we make it, so I started making a small batch for our “Sunday Funday” meals, and it is just enough for our family of four to enjoy that night with a little leftover for the next day.

Our family is on a mission to reduce food waste. We usually eat leftovers at lunch, but sometimes, we just don’t get them all eaten, and we end up throwing them away. That’s not cool. So, we have decided to make an effort to make more things in small batches, put less food on the boys’ plates, and try to create new recipes with leftovers. Tips for a Small Batch Mac and Cheese
- I like to cook mine in an 8” cast iron skillet because I like the way it looks; however, you can also cook it in a small baking dish or loaf pan.
- You will use only about a ¼ of a box of pasta, which is cool because that means you will have pasta in your pantry for the next time you want to make mac and cheese.
- When I am feeding a crowd, I will double this recipe and cook it in a 10-inch skillet.

Dried pasta, shells, or whatever you prefer
All-purpose flour
Whole milk
Salt
Black pepper
Cheddar cheese
Breadcrumbs
Cowboy’s Grill seasoning
How to Make a Small Batch of Mac and Cheese
Preheat the oven to 350 degrees F. Spray an 8” cast-iron skillet with cooking spray and set aside.
Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente, about 10 minutes. Drain in a colander and rinse under cold running water. Drain well.
Melt the butter in a heavy 3-quart saucepan over medium heat.

Add the flour, stirring constantly with a wooden spoon, cook over medium heat for 3 to 4 minutes, being careful not to let the flour brown.

Using a whisk, add the milk in a steady stream and cook, whisking constantly, until thick and smooth, 4 minutes.

Remove from the heat. Add the salt, pepper, and 1 cup of cheese, and stir well.

Add the noodles and stir well. Pour into the prepared skillet.

Mix the remaining 1/4 cup of cheese, the breadcrumbs, and the grill seasoning together in a small bowl. Sprinkle evenly over the macaroni and bake until golden brown and bubbly, about 25 minutes.

Remove from the oven and let rest for 5 minutes before serving.

This has been my method for Mac & cheese for 46 years but I thank you for scaling it down for me. Never fails; I boil the macaroni and then make the cheese sauce in the same pan while I drain the pasta. Perfect every time!
Love this recipe! Perfect for my husband and I or when we have a couple friends over for dinner. Super creamy. I have scaled up to a full lb of cavatappi, tripled the sauce recipe, worked perfectly! I use white cheddar cheese-it’s to make my crumb topping, and Nashville Hot Dill seasoning – could not find your Cowboy Grill seasoning in VT.

we like this recipe, but i think it has too much sauce for the amount of macaroni.
As a single person, I love to find recipes like this. I made it, came out fabulous…ate leftovers a couple days. Happy camper! Making it again tonight which is unusual for me. I very rarely repeat a recipe unless I really love it.
I just made this and wow was it fabulous! Never thought about “small batch” until I found this recipe! Great idea, will be making it again!
This is a good recipe and perfect for smaller families. I just have one question … how much salt are you supposed to add? I think it’s missing from the ingredients list. A half teaspoon of pepper seemed like a lot, so I ended up using a half teaspoon salt and a quarter teaspoon pepper. That tasted about right to me! Maybe adjust your recipe to include the salt? Thx!
We love this recipe! It’s great to have just enough for a side dish without making an entire pan. How would you go about freezing this? I’d love to have some ready to go in the freezer or add it to meals I gift for new babies, etc.
