Swedish Meatballs with Sauce
This recipe is one of our favorite comfort foods. Our name for these classic Swedish Meatballs is Karli’s Meatballs, because our dear friend, Karlie Olson shared the recipe with us. These Swedish Meatballs in the rich creamy gravy sauce offer a ton of flavor and are super simple to make.

The Story Behind these Swedish Meatballs
This recipe was inspired by one that was shared with us by Arturo’s Ph.D. major professor’s wife. She is an amazing cook. Arturo has fond memories of the baked goods she would send with KC, his major professor, to get them through long days of research. Her version of these meatballs includes venison, but since we are not hunters, we just use beef.

How to make Swedish Meatballs
Preheat oven to 400 degrees.
In a large mixing bowl, add the beef, breadcrumbs and oats and mix thoroughly.
Then add milk, eggs, parsley, spices and mix well.
Cover a baking pan or cookie sheet with parchment paper.
Use a cookie scoop, to scoop out the meatballs and space them about 1″ apart on parchment paper.
Bake for approximately an hour, turning them over after 30 minutes.
Meatballs Sauce
Start by melting the butter over low heat, then sprinkle with four and whisk until mixed.
Cook about 3 to 4 minutes, stirring occasionally.
Add the remaining ingredients except the cream.
Continue stirring until completely smooth. Reduce heat to low and cover, cooking for about 10 minutes and stirring occasionally avoid clumping.
Adjust seasonings to taste.
About 10 minutes before serving, add cream and whisk to desired consistency.
Note: Used approximately 2/3 cup cream.

- 1/2 cup milk
- 2 eggs
- 1/4 cup fresh parsley minced
- 1/2 tsp red pepper flakes
- salt & pepper
Meatball Sauce
- 3 tbsp butter
- 3 tbsp flour
- 2 cups beef broth
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 – 2 cups cream
