Beef and Cauliflower Casserole

Ingredients
  

  • 1 lb ground beef seasoned with our Italian Ground Beef Sausage, see recipe below
  • 1 head cauliflower
  • 1 tbsp tomato paste
  • 1/4 cup pesto
  • 1 onion diced
  • 1 garlic clove minced
  • 1 14oz diced tomatoes
  • 1/4 tsp red pepper flakes
  • 1/2 cup mozzarella cheese grated
  • 1/4 cup parmesan cheese grated
  • 1/4 cup panko bread crumbs
  • parsley for garnsih

Instructions
 

  • Begin by browning your ground beef in a 10 1/2" skillet.
  • While the beef browns dice up the onion and cauliflower.
  • Once the beef is browned remove from skillet and set aside.
  • Add a turn of olive oil to the skillet, then add the onion and cauliflower. Sautee the onion and cauliflower for 5 minutes, till the onions become translucent and the cauliflower begins to soften.
  • Next add the can of diced tomatoes, tomato paste, pesto, red pepper flakes and garlic.
  • Cook down for about 5 minutes and then add the beef back into the skillet and top with the cheese and bread crumbs.
  • Pop into the oven and bake for 20-30 minutes. Garnish with parsley.
