Swedish Meatballs in Sauce

Ingredients
  

Meatballs

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1/2 cup quick oats
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup fresh parsley minced
  • 1/2 tsp red pepper flakes
  • salt & pepper

Meatball Sauce

  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups beef broth
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 - 2 cups cream

Instructions
 

Meatballs

  • In a large mixing bowl, add the beef, breadcrumbs, and oats and mix thoroughly.  
     
  • Then add milk, eggs, parsley, spices, and mix well.
  • Cover a baking pan or cookie sheet with parchment paper.
  • Use a cookie scoop, to scoop out the meatballs, and space them about 1" apart on parchment paper.
  • Bake for approximately an hour, turning them over after 30 minutes.

Sauce

  • Start by melting the butter over low heat, then sprinkle with four and whisk until mixed.  
  • Cook about 3 to 4 minutes, stirring occasionally.  
  • Add the remaining ingredients except for the cream. 
  • Continue stirring until completely smooth.  Reduce heat to low and cover, cooking for about 10 minutes and stirring occasionally avoid clumping.  
  • Adjust seasonings to taste.  
  • About 10 minutes before serving, add cream and whisk to desired consistency.
